What is a stuffed parata?
Parata is a layered, griddle-cooked flatbread, flaky from being folded and oiled as it is rolled. Sri Lanka eats it plain with a curry or gravy, and it eats it stuffed: the dough wrapped around a filling and cooked until the outside crisps and the inside melts. Cheese, chicken, mutton and fish are the fillings people come back for.
Ape Parata means "our parata", and it is the house version: stuffed, folded and served hot. Roti parata is the plain kind, served in pairs with a chicken or tomato gravy for tearing and dipping.
