What is kottu roti?
Kottu, or kottu roti, is the sound of a Sri Lankan street at night: godamba roti chopped on a hot griddle with two metal blades, tossed with onion, leeks and carrot, egg, and chicken, mutton, fish or seafood, then finished with a ladle of curry gravy. The name comes from the Tamil word for chopped. It is a dinner dish, filling and meant to be eaten straight away.
String hopper kottu swaps the roti for chopped string hoppers, which makes it lighter and softer. Cheese kottu adds melted cheese to the griddle at the end. A vegetarian kottu keeps the vegetables and egg and leaves the meat out.
