What is Jaffna crab curry?
Jaffna crab curry is the best-known dish of the north of Sri Lanka. Fresh crab is cooked in a gravy built on Jaffna curry powder, a dark roasted blend of coriander, cumin, fennel, chilli and curry leaves, with tamarind for sourness and coconut for body. It is eaten with the hands, with rice or string hoppers to take up the gravy, and it is a dish for a table that has time.
Gammiris kakuluwo, black pepper crab, is the other way the island cooks it: freshly ground black pepper, garlic and onion rather than the roasted curry blend, so the sweetness of the crab comes through under the heat.
