What is a hopper?
A hopper, appa in Sinhala, is a bowl-shaped pancake of fermented rice flour and coconut milk, cooked in a small round pan so the edges turn thin and crisp while the centre stays soft. An egg hopper has an egg cracked into the middle as it cooks. Kiri appa is a milk hopper, richer and softer, and hakuru appa is sweetened with jaggery. Hoppers are eaten with lunu miris, a sambol of onion and chilli, or with a curry.
String hoppers, idi appa, are a different thing: fine steamed noodles of rice flour pressed into round nests, served in a stack with a coconut milk gravy and a coconut sambol. They are a breakfast and dinner staple across the island.
